Naked barley meals
The unhusked, bare-seeded barley variety, Jorma, from eastern Finland is the inspiration behind Naked Barley. The husk of the grain comes off during the ripening stage, so there is no need to peel Jorma barley in a mill–and we can use the whole grain during production. Jorma barley is very high in dietary fibre and has significantly more protein than regular barley. Ravintola Kajo creates the recipes of the Naked Barley Meals.
